Getting to Know La Terrazza di Roma – Delightful Negroni Variations and a Stunning Beet “Carpaccio”
One of the coolest things about writing for Celebrating Puerto Vallarta is we (KC Shomler & Steven Shomler) get to play tourists in our own hometown.
So one fine day in late April, we took ourselves to Marina Vallarta a “high season” (November – April) favorite neighborhood for snow birding gringos (Americans) and Canadians.
Centered around a functioning Marina (hence, the name), there are streets full of pretty homes, condos, a golf course and a great variety of shops, spas, bars and restaurants.

The Marina Vallarta Neighborhood
Marina Vallarta is a fantastic place to stroll next to the boats while people-watching and then take your pick from all kinds of restaurants at various levels of fanciness and price.
After our pleasant, if a bit hot, walk we needed a cool drink and a snack at a pet-friendly place as Sir Nash was also in attendance.

La Terrazza di Roma called our name with its excellent location next to the water, tables dressed in crisp, white linens and plenty of fans to augment the breeze off the marina. This being the end of the high season, we pretty much had the place to ourselves.
The menu of Italian dishes has a bunch of pizzas, pastas and salads, but we were just looking for drinks and snacks.

Bruschetta Burrata e Prosciutto

Red Beet Carpaccio
The Bruschetta Burrata e Prosciutto – Homemade bread with Burrata cheese, prosciutto, figs, cherry tomatoes, and arugula was solid, but the beets were definitely something to write home about!
The gorgeous beet “carpaccio” was stunning (and generous) and we gobbled it all down. I still think about that dish – thin slices of red beet arranged in an artistic, overlapping pattern on the platter, topped with burrata, almond slivers and a crown of arugula. Dressed with olive oil and balsamic and served with toasts, it was as satisfying as it was beautiful.

Luscious Refreshing Cocktails
The selection of different riffs on negronis was fun and tasty. La Terrazza di Roma offers 7 different variations on the Negroni and I (KC) chose the “Americano” which features Vermouth rossa, Campari and Soda Water.
Steven had the Saltu Avis (Jungle Bird). La Terrazza puts a fun Italian twist on this classic tiki cocktail by combining Appleton Estate Rum, Campari, pineapple juice, and citrus juice. Very refreshing on a warm day!
Service was kind and very helpful, thanks to Azaid. As our visit was mainly an introduction, we would certainly go back to sample more of the menu.
